Job Description
Job Summary:
As an Executive Chef, you will be responsible for everything in our East
African kitchens (10 Kitchens).
Not only will you be required to oversee the day-to-day running of the kitchens, but you are
also tasked with meeting health and safety standards, training, leading the junior chefs
and coming up with new recipes.
Responsibility:
- Plan and direct food preparation and culinary activities.
- Modify menus or create new ones that meet quality standards.
- Estimate food requirements and food/labor costs.
- Supervise kitchen staff’s activities.
- Arrange for equipment purchases and repairs.
- Give prepared plates the “final touch”.
- Comply with nutrition and sanitation regulations and safety standards.
- Maintain a positive and professional approach with co-workers and customers.
- Overall responsibility for the kitchen’s daily operations.
- Liaising with the Operations Department for food orders.
- Identify and introduce new culinary techniques.
- Interviewing and testing new potential kitchen employees.
- Training all the kitchen staff to run a legal and successful kitchen.
- Maintaining/raising the food’s profit margins for your employer.
- Monitoring and controlling stock levels.
- Ensuring correct stock rotation procedures are followed. Implementation of health and safety procedures in the kitchen.
- Estimating costs and ensuring all purchases come within budget.
- Taking care of the kitchen’s accounts and creating a work roster.
- Assisting and directing kitchen staff in meal preparation, creation, planting and
delivery.
- Have patience and calmness to train the staff who are starting from scratch with very
little training and knowledge but are willing to learn
Requirements
- Culinary degree or equivalent certification preferred.
- At least 5 years experience in an Executive Chef position in a high-end Hotel or
Lodge.
- Strong management & customer service skills and good knowledge of hospitality
operations.
- Ability to train and nurture each team to deliver the high standards that Lemala is
known for.
- Strong leadership and communication skills.
- Ability to manage and motivate a diverse team in a fast-paced environment.
- Knowledge of food cost control, menu planning, and inventory management.
- Ability to manage budgets and schedules.
- Must be ready and willing to travel and live in the bush where our camps and lodges
are based.
- Ability to build strong relationships with Managers, staff, vendors, and stakeholders.
- High skills in computer literacy with proficiency in MS Office.
- Creativity and passion for culinary arts.
- The ability to work well under pressure in a fast-paced environment.

- Must be fluent in English.
